一期一会

本日のお客さんはイギリスからの夫婦。教師をされているご主人とライターの奥様。とても仲が良く、毎年夏休みには長い期間旅行に出かけているそうです。

順調に定番の鯵の南蛮漬け、茄子の田楽、きゅうりの胡麻酢和え、ごはん、味噌汁を作り、今日はサービスにマグロの漬けを一緒に作ってみました。日本のマグロは美味しいと言って下さる方が多いので、外食ではあまり出ないかもしれない漬け、我が家のメニューでよく登場する煮切りみりんと醤油で作る甘辛いタレで作る漬けを試して頂きとても喜んで頂きました。

 前回も書いたのですが、お客さんと最初に会う時はどんな方なのか少し緊張しますが、一緒に料理をして食事をする頃にはすっかり打ち解けています。会話の中からはご夫婦の暮らしぶりが伺えて、きっときれいな庭があって素敵な家にお住まいなんだろうな、など思いを巡らせます。

 私は大袈裟なのですがいつもこんな風に考えています。 世界中の人々の中で何かしらのきっかけで日本を知り、行ってみたいと思い、好きになり、その中の人々が日本に旅行に来てくださります。仕事の関係でいらっしゃる方もおります。更に和食が大好きで習ってみたい人、お料理が好きな人、日本の文化が好きな人がこのMusubi Cooking Class に来てくださるのです。きっと旅行に来られるのもどこの国も同じで仕事を調整したり、経済面を考えたり、旅行中のスケジュールを同行される方とすり合わせたり。充実した休暇を過ごすために沢山の段階を踏んでようやく私の教室に来てくださるのです。

 この何百万、何千万(もっと?)分の一のご縁ですから、せめて我が家に来て下さった方には料理だけでなく、この先の旅行やこれまで日本で滞在した思い出も素晴らしいものにしてもらいたいと心から思っています。

 この日はちょうどお盆休みの前で交通機関は大混雑を予想されていました。会話の中で、これから名古屋経由で長野方面に行く予定なのでこの近くで切符がとれないかというご質問。お盆は公休日でない為混雑予測は難しいのかもしれません。しかも行き先がメジャーな場所ではなくローカル列車を乗り継ぐような場所なのです。今から切符取れるかな、とそれを聞いて私の方が慌ててしまい、一緒に近くのみどりの窓口へ向かいました。

 長い列に並び窓口の方に行き先を説明して目的地の切符を手にすることが出来ました。後に聞いたのですが、ローカル線の旅も車窓から見える景色がとても素敵で乗り継ぎの駅でも楽しく過ごされたそうです。

 そんな風に、旅の感想を頂けると本当に良かったと思います。しかし、このご夫婦ならたとえ混雑していたとしてもそれも日本での経験として楽しんでおられたのかもしれません。いろんな考えが頭によぎるのですが、とにかくこんなに優しいご夫婦に会えたことをありがたく思います。

 この日に限らず、教室にいらしたあと、皆さんどんなところへ行ってみたいか、どんなものを買いたいかなどを聞いて出来るだけ応えられるようにしています。最後まで日本で充実した時間を過ごしてほしいので、ついついお節介をしてしまうのですが。

 そして日本での滞在は素晴らしいものでした、というメールを頂くと本当に嬉しくなります。今後もこの一期一会の機会を大切にしていきたいです。

 

 

Ramen class in Cherry blossoms season, April 7th.

During the cherry blossoms season, we at the Musubi Cooking Tokyo receive much more customers than winter months. On this April 7th . class for Ramen cooking, I welcomed 3 groups of people from Sweden, Israel and Swiss.

For one of the ramen toppings, we cooked minced pork meat flavored with Miso and vegetables. You may add finely chopped ginger, leek, garlic, carrot or coriander as you like. This was a good accent to add to ramen as Miso is probably the most popular Japanese seasoning among my guests.

When you hear Miso, I wonder what type of miso you are thinking in your mind. Miso is a very old seasoning made with fermented soy beans. It was already used before century in China. In Japan, the oldest record of Miso is found in the writings of 8th.C and it has been used in cooking till today. There are many variety of Miso throughout Japan. We will let you taste some of them at our classes so find out your favorite one! 

All of my guests were talking about how gorgeous cherry blossoms were on this day, as they were in time for the full bloom. One of the questions I received was, do we eat cherry blossoms. Well we actually do!  We use salted leaves for wrapping sweet dumplings. We also salt pink flowers of cherry trees and make preserves. This salted cherry flowers look pretty but the taste is.. quite salty! You may also notice a faint touch of cherry blossoms fragrance.

I happened to have a small jar of this salted cherry blossoms in my fridge so I let my curious guests taste some of this, expecting not much Wows. Yet I got a very interesting idea from my Swedish guest that it will make a great companion for a shot of rum and other hard liquors. Looks much prettier than salt, too! 

It is always so inspiring to cook and chat with food lovers from around the world!

Ramen making experience at home kitchen (March 7)

Did you know ramen is not actually a very traditional menu for us Japanese? Yet it is so popular now throughout Japan. Each region and shops has its original recipe for soup, noodles and toppings.

It is originally from Chinese cookery so the base soup stock is often made with chicken. But the variety keeps growing. Kyushu region (southern island of Japan) is famous for its thick pork soup stock called ‘Ton-kotsu(i.e. pork bones)’ and now this is everybody’s favorite  even around Tokyo area.

Many shops like to add Japanese Dashi soup stock, too, as it brings more complex aroma with seafood ingredients. Or there is a shop famous for its Italian ramen in my neighbourhood, using tomato etc. But spaghetti has its origin in Chinese noodles so this makes sense.

At Musubi Cooking Tokyo, we also receive quite a few inquiries for ramen cooking and here I challenged to cook our home-made ramen with my 3 guest from Philipine and Brazil.

I have prepared chicken & pork soup stock in advance, as it takes many hours to prepare, mostly simmering. At the class, we made Dashi soup stock with smoked bonito flakes and Niboshi (dried sardins), then mix with the other stocks.

Toppings for ramen could be anything but the most popular choice may be pork slices. Again, it takes a few hours simmering on low heat to prepare nice and melty smooth pork so I showed my guests how to prepare it until you come to the final process of simmering.

Once the ramen is ready, you really must start eating it right away, no bother talking or socializing with others at the table, because the ramen noodles get soggy very soon and that ruins the whole effort.  Slurping is just fine, as that is the only way to taste both noodle and soup together while everything is still hot!

Ramen is our comfort food and it made everybody feel much more relaxed and closer. We had a lot of fun talk after finishing our ramen bowls, even some secret stories how the couple met etc. I hope my guest enjoyed their time at my kitchen as much as I did. Thanks for coming!

The other day, I had a lovely family from Sydney, Australia.

You can see how much fun we had during the cooking class.  Plus, the intimacy of having visitors to Japan come into your house to learn creates a wonderful bond that we all remember forever.

This time, we talked a lot about the difference of ingredients and the cooking difference between Japan and Australia.

Tempura Class

Hello, this is Yuki, one of the instructors of Musubi cooking class.

I started to teach Japanese home cooking and Japanese table coordination during the 7 years I lived in Los Angeles, USA.  When I moved back to Japan in September of 2016, I, of course, wanted to continue teaching Japanese home cooking in Tokyo.

This is my first blog entry for for Musubi Cooking, so hopefully you can enjoy seeing how fun it is to learn (and eat!) Japanese home cooking at home in Japan!
